Rémi Barroux of Le Monde writes: "From the secrets of the earth to those of the aromas, the wine tourism project of Pressoria, in Aÿ, in the Marne, introduces families to the different facets of champagne production. Not forgetting the tasting."

"Naturally, the visit begins with the discovery of the underground. Hands touching the chalk, very present in the subterranean Champagne region, the visitor is introduced to the geological formation of the region through an animation. Then, the roots, with a general smell of the soil, come to draw from the earth the trace elements and the water that the plant needs. Then the seasons and the evolution of the plant and the grape, the link with the work in the vineyard, the effects on the soil and the subsoil, the phenomena of runoff, the drought are explained through a projection of images on the walls of a large room."

"The visit continues in beautiful spaces, which reconstruct a press or a vat room – an opportunity to understand the art of champagne making and blending, to unlock the secrets of effervescence and aromas."
